In addition, the supporting surface must be level, smooth, dry, sturdy, at a height of approx. 80 cm from the ground and with the necessary space around it for use and maintenance.

• 1 whole egg and 2 yolks

 

Dosing of liquids and dough

The amount of liquid and weight of the dough can vary depending on the residual moisture content of the flour and the type of flour used. Whole-wheat and/or different cereal flours have a lower cohesive capacity than refined wheat flour, so the dough with these flours will always be more clumped and less compact than a dough with refined flours.

Therefore, it is advisable to reduce the total weight of the dough in order not to damage the machine.

Excessive amounts of liquid cause the dough to stick to the kneading arm and vessel.

 

Instructions for use

Reber bread pizza dough mixer 400 Watt 10208N is a powerful machine with continuous operation. We therefore recommend that you follow these simple instructions when using it.

The machine is delivered fully assembled and ready to use. The bevel gear of the kneader is lubricated with special Long Life grease, so it is not subject to wear and tear and should never be changed or added to.

To use the machine:

1. Turn the cover anti-clockwise and remove it from its housing;
2. fill the container according to the recommended dosage and method;
3. insert flour first and then liquids
4. place the cover on the appropriate slots (the cover has only one possible position for correct attachment and it must be rotated until the correct slot is reached) and turn it clockwise as far as it will go to allow the machine to start;
5. start the machine by pressing the engine start switch
6. During work, if necessary, liquid or flour can be added via the slits in the lid without stopping the machine;
7. after about 2.5 to 3 minutes, check that the dough obtained has the desired consistency and then switch off the machine, turn anti-clockwise and remove the lid and take out the dough.

If the recommended doses have been followed, the dough must detach easily from the kneading arm and the container must be clean and free of flour residues.

 

Once the kneading work is finished

The resulting mixture can be reshaped by hand for the preparation of bread or other sweet or savoury bakery products, or it can be chopped up and used for extruding with the Pasta Press adaptable to the mixer's gear motor.

When finished, turn the kneading arm anti-clockwise and remove it from the vessel, turn the vessel anti-clockwise to remove it from the stand, wash and dry thoroughly all components that have come into contact with the dough.

It is advisable not to turn the cover all the way down when storing the machine in order not to risk damaging the safety switch.

The machine can also be used with other optional accessories. For this reason, it is equipped with starter key for optional accessories. It is used if one of the optional accessories applicable to the gearmotor is to be fitted in place of the kneader, to allow the motor itself to start.

Cleaning and Maintenance

The lid and container are made of food-contact plastic and can be washed in a dishwasher. Overly aggressive detergents and high temperatures can damage the aesthetics of the product without affecting its technical characteristics.

Furthermore, the kneading arm is made of cast AISI 316 steel and can be washed in a dishwasher, bearing in mind that overly aggressive detergents and high temperatures can damage the product's aesthetics without altering its technical characteristics.

When you have finished working and using the machine, unplug it from the power socket and put it away.

In compliance with hygiene regulations, all parts that come into contact with foodstuffs are totally and easily removable with the spanner provided, so that they can be easily cleaned. In addition, the demountable parts that come into contact with food are isolated from the electrical apparatus.

After each use, wash with warm water and mild detergents and dry thoroughly.

Do not use water jets on the electric motor and do not use brushes, which could deteriorate the surfaces of the machine cover.

Clean the motor cover with a damp cloth using mild detergents to avoid damaging the surfaces. In any case, do not wash the electric motor or immerse it in liquid solutions.
