The IMPERIA Chef in casa and MONFERRINA Dolly kneading machines are equipped with an extruder and can mount both dies for making puff pastry and dies for making pasta. In fact, they are all easily interchangeable. In addition, they are made of bronze-plated material, to ensure perfect operation with all types of pasta, recall the artisan production of pasta of yesteryear and comply with food contact regulations.
Chef in the house makes two types of pasta sheet: 100 millimetre high and 170 millimetre high. The 100 millimetre sheet can be made to make ravioli with the MONFERRINA ravioli machine.

How the extruder works
The extruder and its die work together. In fact, when the IMPERIA Chef in casa and MONFERRINA Dolly machines are started up to produce pasta, an endless screw at the bottom is activated and pushes the contents of the bowl outwards.
At the bottom of the tank is a steel helix that is connected to a hole, on the front of which the die is engaged. The contents of the kneading tank are then pushed by the worm screw against the extruder and the die.
The content then looks for a way out and passes through the holes in the die, taking on the shape envisaged for each type of dough and losing a small amount of moisture content.
After drawing, however, it is important to let the resulting product dry in order to cook it better.
