How an embossed vacuum bag works

The vacuum food storage bag is nothing more than a flexible plastic container in which food is placed to protect it from air. Despite this, it has some special features:

  1. embossing. It is the knurling, the rough part inside one side of the bag. It serves to create an air space through which air can pass. It is achieved through a process of thermoforming the film. This is heated and given a diamond shape. This is why it is important to have good quality bags, because otherwise the embossed layer could be ruined by this procedure.
  2. multilayer. It is not visible to the naked eye, but each side of the bag is made up of many layers, as if overlapping. A greater number of layers guarantees a greater barrier effect. The polyamide and EVOH in this bag ensure lower air permeability. It has been measured that these layers are 10 times less permeable to oxygen than polyamide alone.
  3. thickness. This range of bags is 90 micron metre thick on both sides. This thickness is ideal for optimum preservation and to work with all types of external suction vacuum machines.

How does the vacuum machine create the vacuum in the bag?

The procedure for vacuum-packing is quite simple. The vacuum bag is placed in the machine, with the flaps inside the seals, usually black. The lid is pressed down firmly (if it does not close by itself) and the machine is started.

Right now the bag is inside the vacuum machine with the flaps inside the so-called vacuum chamber, which is closed on one side and has the vacuum bag mouth on the other. In reality, the vacuum bag is still open because the embossing does not make the two layers of film stick together.

When the vacuum device is switched on, it starts to suction. In fact, it will pull the air out of the bag and create a vacuum in the vacuum chamber described earlier. Once a good vacuum level is reached, the machine seals the bag and that's it!

 

How to use vacuum pouches

There are two tricks to be followed in order to immediately achieve vacuum with bags, especially when they are very wide and long.

Trick No. 1: stretch the bag flaps well, horizontally, to prevent them from wrinkling, and insert them halfway into the vacuum chamber of the vacuum machine.

Trick No. 2: Once the vacuum cycle has started, especially if the bag is very long, support the vacuum bag at the bottom by raising it to the height of the machine, to make it parallel to the work surface.

In these ways the vacuum machine is facilitated in the extraction of air!
